Hats off to Katie + Lee!

The couple’s hat themed wedding had guests looking like they’d fit right in at a day at the races, as Champagne and jugs of Pimms were served after the ceremony along with a selection of tasty canapés.
Canapés:
Pork rillette with onion chutney on a dried apple disc
Roast beef + horseradish Yorkshire pudding
Scotch whiskey cured trout blinis with lemon crème fraiche

The couple wanted a relaxed feel for the food that would reflect the surroundings so opted for a delicious slow-smoked buffet menu which also ensured everyone could sit back, relax and enjoy a day of feasting and celebration with family and loved ones… all while wearing the most fantastic hats and headpieces!
From the smoker:
Beer-brined chicken quarters
Dry rubbed smoked brisket
Whole salmon stuffed with spinach, red pepper and whisky
Halloumi + Mediterranean vegetable skewers (v)
Salad selection:
Spinach, pine nut, feta, egg + potato salad (v)
Peas with bacon, shallots + parmesan
Mixed baby leaf salad (vg)
Asian slaw with orange dressing (vg)
Breads + flavored butters
Throughout the day the venue’s main bar was kept busy ensuring guests enjoyed a selection of fine wines, local craft beers, premium spirits and bubbles while signature ‘his’ and ‘hers’ cocktails (whisky sours for him and cosmopolitans for her) were mixed in the bespoke cocktail lounge where guests could relax on comfy Chesterfield sofas and take in the sweeping views across Pevensey.
A cheese table was brought out later in the day and with a nod to Lee’s Thai heritage, the evening snack consisted of chicken pad Thai and Thai vegetable curry & rice.
We were thrilled with two great results at the end of the event… firstly, we secured our place on the preferred supplier list for Blue Door Weddings and secondly, Lee’s mother who is a fastidious Thai cook and who was keeping a close eye on how our team performed during the day, scored our chefs a brilliant 9 out of 10 for their efforts (which we are told is high praise from her indeed!), only narrowly missing out on a perfect 10 because one of the Thai dishes could have done with a splash more soy sauce.
Katie and Lee said "SPACE + THYME was an obvious choice as our wedding caterers as they created an amazing menu for the relaxed vibe we were going for, and we were in love with the idea of having their cool smoker train for incredibly tasty food! It was fabulous and the team was absolutely fantastic! Robert was there for me from beginning to end and was always happy to spend over an hour on the phone talking through choices with me and dealing with a stressful bride's moments like a pro! Chris and Penny's wine and sparkling choices for the bar were perfect and the food was great and exactly what we wanted! The whole thing went off so well on the day! Thank you so so much for making our day magical!"
We loved being part of Katie and Lee's special day and wish them everything of the best as husband and wife! We are looking forward to our next wedding at Montague Farm! xxx
